I recently posted a picture on Facebook and Instagram talking about my sugar free Banana Cake. A dear friend asked me for the recipe. I don't own this recipe, it's an old Kiwi favorite the only difference being the use of a sugar supplement. So here goes.
I went shopping during this lockdown, and found this lovely looking Whole Earth Baker's Secret, The Ultimate Sugar Replacement. Now I'm genetically prone to Sugar Diabetes Type II. So I'm always looking for alternatives to have a sneaky treat.
125g Butter, softened ¾ cup Sugar Replacement 2 eggs 1 cup mashed banana (about 2 large bananas) 1 tsp vanilla essence 1 tsp Baking Soda 2 Tbsp hot Milk 1¾ cup Standard Grade Flour 1 tsp Baking Powder
Icing Now here's the naughty bit: 1½ cups Chocolate Icing or Cocoa and Sugar Replacement (up to you if you want to be super naughty, I added some melted Dark Chocolate, about 1/2 a cup. I know I know .... I'm not Perfect! 1 Tbsp Butter (softened) 1-2 Tbsp boiling water
